HKBU has developed a novel method for authenticating edible bird's nest (EBN) and related products using specific peptide markers derived from EBN hydrolysates.
This method leverages mass spectrometry techniques to identify markers that can distinguish between authentic EBN, white EBN, grass EBN, and adulterants. It help consumers to identify authentic EBN from the market.
